Pull out el Sofrito!

Hola! Hello! Konichiwa! Bonjour! Ciao! However you say it, what's up and welcome to La Comida de Jeremie.

 

If you're not familiar with the term, you might be asking yourself what the heck is sofrito?! Well friends, sofrito is a base used in many traditional Puerto Rican dishes and is a mixture of fresh herbs and veggies. A base begins the journey of a meal and might vary across cultures and dishes. One base might be a couple of teaspoons of olive oil drizzled over freshly chopped onions and garlic while another looks like seasonings sprinkled into boiling veggie broth. The point is this: we all start somewhere. So, today, I am here to share the "base" of my story and how I got my start in the kitchen.

 

I'd like to start by introducing myself and telling you a little about my background. Although I was raised on the East Coast--a majority of that time spent in a Southern Connecticut city not far from NYC and in Central Florida--I was born on the beautiful Isla del Encanto of Puerto Rico. I have a special place in my heart for that beautiful island, which is rich in its cultures and traditions, filled with beautiful green plantains, coconuts, and quenepas, and made up of gorgeous beaches; towns; long, long roads; rain forests; and sky-high mountain views. Puerto Rico is what I consider my sofrito, it's where I got my start.

 

My family soon migrated to the North East, spending many years in NYC and currently Connecticut. Here I learned all about different foods, music, languages and fashions. I soon realized my passion for art! My first love, sketching, soon blossomed into sewing. As soon as I graduated high school I decided to attend an art & design college in NYC, where I learned skills used in the world of fashion design while I got to explore every inch of the concrete jungle. I was awakened to new views of the world.

 

However, it was not long before I realized that this passion came with a high cost and that I had just thrown myself into the lion's den without actually being prepared! I had an "early-life crisis" and had to do some soul searching. Although I'm still young and still finding my way in life - I have a much clearer mindset and know what a future actually looks like to me. I have finally found peace in myself and have activated that passionate, goal-driven part of my mind.

 

Shortly after falling in love with myself again, I fell in love with a guy who is the epitome of "SELF-DETERMINATION." With so many odds against him he has always come out winning. He, to this day, has shown me that I must go after what I want in life and doesn't allow me to sit back in self-doubt or defeat. He shows me that I, too, can WIN! He is truly the reason why you're reading this post today. However, the only problem was that he lived across the country...

 

 

This brings me to why I am currently living in Memphis, Tennessee, a diverse city that is famous for many things, especially its music, art, and BBQ. But don't worry, it is also very vegan friendly. Even more, an underappreciated feature of the city is its heart. I currently work for a nonprofit that is strongly committed to ensuring justice for Latino & minority communities. Yes, I have a new-found love for this city, and I am so happy to be here experiencing new adventures.

 

So, as you can see, I've spent my life moving all around this beautiful country, experiencing many different cultures. What does each of these fascinating cultures have in common? Food! So many of my fondest memories with my loved ones involve great laughs and food. I think I've gained this love of cooking from my grandmother and mother. We spent so much time in the kitchen (or I was in the dining room, so I wasn't in their way!), and I grew up seeing them cook the most extravagant meals from the most simple ingredients. Whether for a house full of people or just for us three, everyone was served and left with their bellies happy. Being able to enjoy a delicious meal with your family or friends is definitely something to cherish. This passion is something we all share and what I want to share with the world.

This journey is what has led me to bring this creative and interactive site to you. Through this platform, my mission is to show the world that you don't have to have all the riches in the world to cook delicious and healthy meals with your loved ones. ​​I want to bring to you a variety of resources and recipes to show you that you can to eat a plant-based diet and not be restricted to boring salads (although I do love a good salad) while also opening your perspectives to the beautiful diversity that fills our world, which includes various cultures, genders, skin-tones, and backgrounds. Beyond the beauty on planet Earth, I want to help spread awareness about cruelty-free choices we can make in our lives and ways we can overcome injustices and hate. Together, we can truly make this world a better place. If there's one thing I learned from my mother and grandmother besides cooking, it's that love can create change. So, I hope you will follow and support me on this journey and that I, too, can help you along yours.
