Plantains are a staple in many homes, especially in the Caribbean and across seas, and as they should be! They are one of my favorite things to cook and eat, because they can be prepared in so many different ways. One of my favorite meals to eat is a plate of hot white rice and stewed beans with a side of greens and fried plantains. It's such a simple and easy to prepare meal that packs quite the punch! So much flavor in these sliced plantains, and the best part is that you can prepare them in so many different ways. Today I'm sharing with you one of the easiest ways to prepare plantains: SLICED & FRIED! I hope you enjoy this staple from my home and it brings you a little piece of Caribbean life into yours.

Puerto Rican Tostones & Maduros

1 Green Plantain
1 Yellow Ripe Plantain
Oil for Frying
1. Slice off the ends of plantains and make slits down the sides of plantains. With fingers or a butter knife peel the plantains outer skin. Slice plantains into 1-inch pieces.
2. In a heated frying pan with oil place plantains and cook as mentioned down below:
For tostones (green ripened plantains) fry on both sides until you reach a golden color. Remove from pan and flatten with a tostonera or a can. Return to pan and fry on both sides for 1-2 minutes until crispy and golden-brown.
For maduros (yellow-black sweet plantains) fry on both sides for about 2-3 minutes until you get a caramelized golden-brown color.
3. Remove from pan. Season with salt and pepper to taste and toss with minced garlic. For a real Puerto Rican flavor you can use adobo!
4. Serve immediately with some mayoketchup.

When frying these fry them on medium-high. If the oil is too hot they will cook/burn the outer layer and the middle section will not cook and if the oil is to low it will absorb too much oil when cooking, leaving you with very greasy plantain slices.
These are best served with a side of mayoketchup, which is essentially mayonnaise and ketchup mixed together to create a dip, that slightly resembles thousand island dressing minus all of the extra add-ins. Give it a try!
